Cajun Fish with Tzatziki Dressing

 

Ingredients
 

600 gms of firm fish, like gurnard

NCSeafood Market Cajun mix (in store)

Oil and butter for frying

 

Tzatziki Dressing

I cup greek yoghurt

2 cloves of garlic, finely minced

1 small cucumber, skinned, deseeded and finey grated

1 tablespoon lemon juice

2 tablespoons chopped fresh dill 

salt and pepper to season

 

 

Salad of your choosing
Select the best of the season for your salad.

 

 

Method
Coat fish with cajun spice mix. Heavy coat for hot and light for less hot. Put in fridge for 10 minutes to set. This can be prepared at the beginning of the day but be prepared for the spice to kick in.

 

Prepare your salad.  Put all ingredients for dressing into a bowl combine and chill.

 

Heat fry pan to above medium heat with butter and oil to get the blackened effect of cajun, or just cook as per normal to ensure spices are cooked.  

 

Serve with salad and drizzle with dressing.
